13 Common Cooking Mistakes You’re Probably Making

Whether you’re a professional chef, or are still learning to boil water properly, everyone makes mistakes while cooking. Some mishaps will go unnoticed, but others can spoil a dish and will leave you ordering take-out.

We’d like to help take your cooking skills to the next level. We’ve compiled some of the most common cooking mistakes and how to prevent each of them from happening in your kitchen.

Mistake #1: You didn’t read the entire recipe before cooking

Before you prepare a dish, you should confirm that you have the correct ingredients and verify the proper cooking time. If you don’t read the full recipe, you could miss critical marinating or resting times for your meal.

Follow this tip: Be prepared before beginning your meal. It’s not worth dirtying the dishes if you’re pressed for time or don’t have the correct ingredients to perfect your meal.

Mistake #2: You boil instead of simmer

Stews and soups benefit from a slow simmer rather than an intense boil. Don’t try to hurry your meal along by bringing it to a boil. Boiling dries meat out and makes the vegetables too soft.

Follow this tip: Simmering helps make the meat tender and allows flavors to blend. Allow enough time for your meal to properly simmer on the stove or utilize your slow cooker. Adding your ingredients to your slow cooker in the morning lets your stew or soup simmer throughout the day, eliminating the need to rush in the evening.

Mistake #3: You don’t know your oven’s real temperature

Not all ovens heat evenly or accurately – even the pricey brands. You may think you are baking your cake at 350 degrees, but your oven’s true temperature is actually lower or higher. Even a slight difference could lead to a cake that’s raw in the middle or burned on top.

Follow this tip: Use an oven thermometer to ensure an accurate oven temperature reading. Then you will know if you need to raise or lower the heat to hit the proper cooking temperature.

Mistake #4: You don’t accurately measure ingredients

Depending on the dish, this isn’t always a big deal, but when baking this can ruin your cake or cookies. Packing flour into your measuring cup causes cakes to be dense and tough, while using too much butter can make cookies flat.

Repeatedly flipping your burgers while grilling or constantly poking your meat lets the juices escape, resulting in dry meat.

Mistake #9: You don’t get your ingredients together

You have to stop prepping the meal to find an ingredient and then you need time to chop it up. Or, worse, you are missing necessary items to complete your recipe.

Follow this tip: Gather, measure, and prep your ingredients beforehand to make cooking and assembling meals quick and effortless. It takes much less time to prep ingredients than to chop them up as you go along. It also ensures you have the ingredients you need while cooking.

Mistake #10: You use a non-stick pan for everything

Non-stick pans are great for breakfast foods such as eggs, French toast, and pancakes but they don’t get as hot as a regular pan. You cannot properly sear a piece of meat in a nonstick pan, nor will your vegetables get that crispy edge.

Follow this tip: Cook your stir fries, meats, and vegetables in a traditional pan, especially if you desire a crispy texture.

Mistake #11: You don’t allow the meat to rest

Cutting your meat immediately after taking it out of the oven or off the grill allows all the juices to run out; resulting in dry and tough meat.

Follow this tip: Let your steak or chicken breast rest for 5 minutes to allow the juices to distribute evenly throughout the meat. A roast, pork loin, or whole chicken will need 20 minutes, so keep it warm by loosely covering with foil.

Mistake #12: You use the same knife for each task

A paring knife is great for smaller vegetables but isn’t up to the task of cutting open a butternut squash. On the other hand, a large knife can be awkward when mincing small items, such as garlic cloves.

Follow this tip: Chose the correct sized knife for the job. You will be more efficient and reduce risk of cutting yourself.

Mistake #13: You didn’t taste the dish as you go

Neglecting to taste the dish can lead to bland, boring food or over-seasoned, inedible food. More than one cook has grabbed salt instead of sugar, used too heavy a hand with spices, or forget to add pepper.

Follow this tip: Taste your dish while cooking to ensure a perfectly seasoned meal. And, please, wash your spoon in between tastes.

The exterior color of meat is not a true indication that your meat has reached a safe internal temperature.

When should I use my digital food thermometer?

Instant-read digital food thermometers give readings quickly. Use the thermometer toward the end of the minimum cooking time and allow it to remain in the meat for 3-5 seconds. The quickness of the reading means less time for the oven door to be open, keeping oven heat stable.

What’s the best way to get an accurate reading?

You can get the most accurate temperature by sticking the thermometer into the center of the thickest part of the meat or casserole. Also, make sure it’s not touching any bone or gristle. For whole chickens and turkeys, the thickest part is where the thigh meets the rest of the body. For thin pieces of meat like hamburgers, stick the probe sideways into the meat.

How do I clean my digital food thermometer?

To ensure their longevity, properly clean them after each use by washing in warm, soapy water and air drying. For very sticky jobs, such as making candy, stick the probe in boiling water to remove any residue.

5 safety tips when using your digital food thermometer:

  1. Do not leave your EatSmart food thermometer in your food as it is cooking. Quick read thermometers are not designed withstand the heat of the oven for long periods of time.
  2. When you take a reading and the meat or casserole is not fully cooked, wash the probe before reinserting it into the meat again. If your food has any bacteria, washing the probe will prevent you from putting any of it back into the dish.
  3. Do multiple checks when cooking more than one piece of meat on the grill or in a microwave. Such heat sources can be uneven and not all of your foods may be cooked to the proper temperature.
  4. Be sure to fully insert the probe to get an accurate reading. Both of our food thermometers have a step down probe that shows how far to insert the thermometer into the meat.
  5. Do not submerge your digital thermometer into water. Our instant read digital food thermometers are water resistant but could become damaged when fully submerged in water.

EatSmart food thermometers are pre-calibrated, but if the temperature appears off, there are three simple way to check the accuracy your thermometer readings.

  1. As a first step, we suggest changing the batteries, as low battery life may cause a temperature discrepancy.
  2. Try the freezing point method. Fill a glass with crushed ice, add cold clean water until the glass is full and stir. Wait for about three minutes before inserting the thermometer into the ice-filled water. Insert the probe, wait a few seconds, then check that the thermometer’s display reads 32 degrees F.
  3. The boiling point method uses heat to determine if your thermometer is accurate. Bring water to a boil in a saucepan, then wait a few seconds to insert the thermometer. If everything is working properly, the display should register at 212 degrees F.

We recommend testing your food thermometer every six months, so that its ready to use whenever you need it. By following these safety and calibration tips, you can keep your EatSmart food thermometer in top condition and ensure that it provides accurate readings.

Smartphones have transformed the way we live. As new apps are developed and cellular networks have improved, we are using our phones more than ever before. Most users spend two to five hours per day on their phone. Teenagers, the most devoted smartphone users, can spend eight hours per day, or more, using their phone. This adds up to thousands of hours per year!

While we can’t get enough of our phones, there is a risk to staring down at our screens all day long. Hunching forward for extended periods of time can result in shoulder pain, neck spasms and headaches; commonly known as “Text-Neck”. SpineHealth.com describes Text-Neck as the neck pain and damage sustained from looking down at your cell phone, tablet, or other wireless devices too frequently and for too long.

The average human head weighs 10 – 12 pounds, but for every inch we lean forward our head weighs an additional 10 pounds. Bending your neck to read a text message can place an additional 50 pounds of pressure on your neck! The farther the head tilts forward, the more pressure it puts on the spine:

  • 15 degrees puts 27 pounds of pressure on the spine
  • 30 degrees puts 40 pounds of pressure on the spine
  • 45 degrees places 49 pounds of pressure on the spine
  • 60 degrees places 60 pounds of pressure on the spine

Continued pressure can result in large amounts of wear and tear, degeneration of the spine and neck, muscle strain, herniated discs, and pinched nerves. There is a risk of losing the curvature in the neck, which may require corrective surgery. Normally, these injuries affect people in their late 40’s, but now teens and young adults are at greater risk.

There are several things you can do to prevent poor posture and relieve any resulting pain including:

  • Always keep your smart devices at eye level to prevent leaning forward.
  • Spend 15 minutes per day stretching out your neck, spine and chest.
  • Every hour, rotate your neck by gently looking to the left and right, 10 times on each side.
  • Strengthen your core muscles so they can help support your upper body and help create proper posture.
  • Maintain a healthy weight to help keep your spine healthy. Every extra pound puts an additional 4 pounds of pressure on your joints. Our fan, Brian Perino, wrote to us,

I am the father of a Type 1 Diabetic 9 year old little girl named Sienna and have been fundraising for JDRF (Juvenile Diabetes Research Foundation) for over 4 years now. By today, Sienna will have had over 12,000 finger sticks on her tiny fingers. She will have had more than 11,000 shots of insulin on her small body and will have been living with Type 1 Diabetes for over 1,610 days. Sienna is only 9 years old and was diagnosed 4 1/2 years ago at the age of 5.

What is Type 1 Diabetes?

Type 1 Diabetes happens when the immune system attacks and kills off the insulin producing cells in the pancreas. Insulin is the hormone that helps sugar to enter the body’s cells. This is how our bodies get energy. Sienna’s pancreas will no longer make insulin and without insulin, she will die.

Type 1 Diabetes has nothing to do with poor eating habits or obesity as many believe. That is a different type of diabetes. She did nothing to get Type 1 Diabetes. Type 1 Diabetes is an auto immune disease. There is no cure!

Every carbohydrate at every meal or snack must be counted. Then the carbohydrates must be perfectly balanced immediately through injections. These injections act like a healthy pancreas would act.

Can you imagine having a shot for every meal, every snack, every day? There are no exceptions and there is NEVER a day off. It is a stressful and exhausting job, just to keep our daughter alive each and every day.

Type 1 Diabetes is a 24/7, 365 day disease. Not only do we check her blood sugar numbers during the day (by pricking her fingers), we also get up at midnight and 3am every night to check her blood sugar and give her carbs or insulin, if needed. Yes, that means as parents of a child with Type 1 Diabetes we have not had a full night’s sleep in over 4 years. Imagine being woken up in the middle of the night from a deep sleep and told that you need to eat something or drink a juice box. Then wait 15 minutes and re-test your sugar to ensure your levels went up before you go back to sleep. Sienna has endured these sleepless nights too many times to count. If we don’t do these checks and her sugars drop too low, she may never wake up in the morning. That is how serious this disease is.
