Italian Quinoa Protein Patties

Quinoa is loaded with protein, fiber and minerals and doesn’t have any gluten, which is a win-win for those with any gluten intolerances.  These Italian Quinoa Protein Patties are full of flavor and easy to cook!

Ingredients

  • 3 eggs
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • 2 cups cooked quinoa
  • 1 cup panko bread crumbs
  • ¼ cup parmesan cheese
  • 4.5 oz frozen chopped spinach, cooked
  • 2 cloves garlic, diced
  • ½ cup diced onion
  • ¼ cup chopped sun dried tomatoes
  • 1 tbsp olive oil
